Cherry Limeade Cupcakes

Try these amazing cupcakes! Cherry limeade cupcakes are easy but delicious. They are packed with flavor and are perfect for any Summer Party.
Ingredients
Cupcakes:
- 1 1/2 cup cake flour
- 1 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1 cup sugar
- 1/2 cup unsalted butter (softened)
- 2 large egg
- 1 large egg whites
- 1/2 tsp vanilla extract
- 1/3 cup whole milk
- 1 1/2 Tbsp fresh lime juice
Frosting:
- 1 cup unsalted butter (softened)
- 1 cup powdered sugar
- 1 tbsp heavy whipping cream
- 1 tsp cherry extract
- red gel food coloring
Instructions
- Preheat oven to 350 degrees. Line the cupcake tins with paper liners.
- Mix the flour, sugar, baking soda, baking powder, and salt in a bowl.
- In a separate bowl add the eggs, whole milk, oil, and lime extract.
- Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
- Mix all together until fully incorporated.
- Beat for 3 minutes on medium.
- Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
- The batter may be a little runny.
- Scoop batter into cupcake paper liners until 3/4 full.
- Bake at 350 degrees for 20-25 minutes.
- Remove from oven and allow to cool for 10 minutes.
- Remove from cupcake tin and place on a wire rack to cool completely before frosting.
