CINNAMON APPLE SWEET POTATO WAFFLES

My waffle iron gets a lot of use in my kitchen. However, it’s been years since I’ve put waffle batter in it. I’m constantly adding different ingredients to my waffle iron to see what happens. I started with some simple waffle iron hash browns, but have moved on to crazier things like waffle iron pizzas and baked goods. When I saw that I had a few leftover sweet potatoes, I knew exactly what I wanted to do with them. With a touch of cinnamon and apples, these sweet potato waffles are perfect for a cold winter morning. As an added bonus, these waffles are a lot more nutritious than classic waffles.
INGREDIENTS
- 1 apple
- 1 large sweet potato, spiralized
- 1 tsp cinnamon
- 1 egg, lightly beaten
- cooking spray
INSTRUCTIONS
- Preheat a waffle iron.
- Spray a medium-sized skillet with cooking spray and heat over medium-high heat. Add the spiralized sweet potatoes to the skillet and cook until tender, stirring frequently. Cook until the sweet potato noodles have softened, about 8 to 10 minutes.
- While the sweet potato noodles are cooking, grate the apple using the large holes on a grater (you can also spiralize the apple, but be sure to pick out the seeds). Add the grated apples to a medium-sized bowl. Add the cooked sweet potatoes, cinnamon, and the egg. Toss until combined.
