THE BEST VEGAN CHILI FRIES

All-American Chili Fries are a great way to treat yourself to some healthy, delectable fun. No greasiness, all delicious flavor.

THE BEST VEGAN CHILI FRIES

Ingredients
  1. 1 cup dried quinoa, cooked according to package
  2. 2 Tbs olive oil
  3. 2 tsp chili powder
  4. 1 1/2 tsp cumin
  5. 1 tsp smoked paprika
  6. a pinch - 1/2 tsp red pepper flakes, to taste
  7. 1/4 - 1/2 tsp black pepper, to taste
  8. 4-5 cloves garlic, chopped
  9. 1 bunch (8 or so) green onions, chopped (save tops for garnish)
  10. 1/2 - 1 poblano pepper, to taste, seeds removed and chopped
  11. 1 red or orange bell pepper, seeds removed and chopped
  12. 1 15 oz. can red beans or kidney beans, rinsed and drained
  13. 1 15 oz. can black beans, rinsed and drained
  14. 1 Tbs low sodium soy sauce (use gluten free if needed)
  15. 2 15 oz. cans diced no-salt-added tomatoes
  16. 1 6 oz. can no-salt-added tomato paste
  17. 1 Tbs maple syrup, coconut sugar or other sweetener
  18. 2 Tbs red cooking wine
  19. 1/2 tsp salt
  20. 1 cup water

Per serving of fries:
  1. 1 medium potato, or two small potatoes
  2. about 1/2 tsp olive oil
  3. a few pinches of herbs, spices and seasonings like onion powder, garlic powder, paprika, salt-free herb blends, cayenne pepper, black pepper, chili powder, etc.
  4. Cooking spray to enhance crispness (optional)
Instructions
  • Cook the quinoa and set aside. Prep the veggies while the quinoa cooks.
  • Combine the oil, chili powder, cumin, paprika, red pepper flakes and black pepper in a large, nonstick cooking pan or pot. Warm over low heat for 2-3 minutes.
